Rocket Pesto

If you have a garden or simply are growing rocket at home in a pot, you know what it means once this dark leafy green gets boomin' - rocket in every meal. This is a simple and quick rocket pesto which you can serve with mozzarella, drizzle into soup or spread on toasted bread and top it with cheese & veg for a delicious sandwich. No fuss - makes life easier.

1 tablespoon - 15ml   |   1 teaspoon - 5ml   |   hands on time: 10 minutes


  • 50 g of fresh rocket
  • 20 g of pine nuts, toasted
  • a small handful of fresh mint leaves
  • 1-2 tbsp of olive oil
  • 1 tsp of lemon or lime juice
  • pinch of salt, to taste

Wash rocket leaves thoroughly and let dry completely before blending. Add all ingredients into a food processor or blender (hand blender works well, too) and blend until you reach desired consistency. 

Tip: you can toast pine nuts on medium-low heat on a dry pan until browned. Add some grated parmesan before blending your pesto if you want a stronger flavor and a more classic taste - this will go perfectly with soups.
