Nut butter is one of the ingredients I always like to have at home. It's one of those things that sometimes, when you come back home after a long day craving a spoonful of smooth nuttiness and it's not there, well...I can't describe the disappointment. That's how much I like it.
Here it is, the way I prepare smooth almond butter: pure simplicity, 100% ALMONDS. It's delicious on its own or you can use it for various recipes, including my Fudge Brownies with Almond Butter.
Hands on time: 10 minutes | Total prep time: 35 minutes | 1 cup - 250ml
- 3 cups of whole almonds, unpeeled
Preheat oven to 180 C (no fan) or 160 C (fan). Place almonds in a single layer on a baking tray and put it in the oven. Bake 10-12 minutes, depending on your oven and size of almonds. If your almond is slightly crunchy and has a deeper taste - it's done.
TIP: Only taste your almond out of the oven once it has cooled. Don't burn yourself! Also, you will only feel how crunchy it really is once it is cool.
Remove from oven, let cool for 10 minutes then add almonds into a powerful blender ( I use Vitamix ) or food processor. Turn your blender on & slowly increase speed to maximum. Then, using a tamper (special tool to push ingredients down) blend for 1 minute. Let your blender 'rest' a little to cool down as the engine will be working on full power. Continue for another minute or until your almond butter is smooth as silk. Transfer into a glass jar and don't forget to try a spoonful while it's still warm.
NOTE: if your blender does not come with a tamper, do not use any other tool as you might get seriously injured if turning blades touch it. Blenders equipped with a tamper have a protective lid which prevents the tamper from touching the blades.
