NEW YEARS RESOLUTIONS
Is it just me or has the first week of this year brought a wave of nasty bacteria with it? It must be the full moon, I'm thinking... Nonetheless, the NYE party has been great and so WILL be 2018. I'm ready! Or almost am, just let me finish that ginger shot...
Everyone's making sure to let the world (of social media) know what their new year's resolutions are and it left me hoping naively that those ideas and wishes are genuine, something you truly feel you're ready to achieve, the steps you're ready to take for a better life. That's my wish for You for 2018 - be honest, but most importantly be honest to yourself.
HEMP AND SPINACH CREPES FOR A POWERFUL DAY
First recipe of the year! I wanted it to be green and I took it very literally. Just to oomph things up, I added hemp protein for a great source of amino acids (20 different kinds, 9 of which our bodies are unable to produce on their own !) and omega fatty acids. Also protein, for those guns. A handful of spinach in these crepes adds dietary fibre as well as vitamins A, K, iron, magnesium and other macronutrients (I'm sure you already know that dark leafy greens = healthy). Go ahead, heat up a pan and invite some friends over for a healthy brunch.
Serves 1 as a filling main or 2 as a side dish | 1 tablespoon - 15ml | Total cooking time: 25 minutes
- 1 egg
- a handful of spinach, washed
- 1 tablespoon of olive oil
- 1 tablespoon of hemp protein powder
- 1 tablespoon of hemp seeds
- 3 tablespoons of plain wheat flour (or 2 tablespoons of GF flour)
- 5 tablespoons of non-dairy milk
- 10 g of grated Grana Padano or Parmigiano cheese
Place all ingredients in a blender or food processor and blend to smooth consistency. Heat up a non-stick skillet, add 2-3 tablespoons at a time, swirl the dough in a pan to get a thin crepe. Once the edges start browning slightly, flip it over and finish cooking for a few seconds more. Transfer to a plate and serve warm with light sour cream and grated hard cheese. Smoked salmon would go well here, too.
