Nut Butter & Granola

Nut butters and granola are probably one of the few things I always have in my pantry. They're easy to make and are great helpers when it comes to prepping healthy snacks. I love adding granola and/or any kind of nut butter on top of my smoothies, porridge, yoghurt or simply snacking on it as a treat. I also LOVE to combine granolas with nut butters, because they go together really damn well. Why not make a nut butter granola then? One favourite thing + another favourite thing! Now we're talking.

I made mine with peanut butter, but you can substitute PB with almond butter instead. Or you can even try cashew butter: sky's the limit here. Add your favourite nuts and seeds as well as maple syrup and a touch of salt. Salt and peanut butter is like bread with butter. Salted butter. You feel me...

 


Makes about 600 g   |   Hands on time: 5 mins   |   Total time: 35 mins


  • 250 g of rolled oats
  • 50 g of raisins
  • 50 g of almond flakes
  • 60 g of pumpkin seeds
  • 2 tablespoons of chia
  • 2 tablespoons of linseeds
  • 5 tablespoons of peanut butter (90g)
  • 6 tablespoons of maple syrup (80 g)
  • 1 & 1/2 tablespoons of coconut oil (20 g)
  • 1/4 teaspoon of salt

Mix everything in a bowl until well incorporated. Bake in a preheated 180C oven (160 no fan) until browned and crispy. Stir with a wooden spoon a few times during baking to prevent any parts from burning. Remove from oven to cool and store in an airtight container.
